The texture of a perfect muffin should be even with a nicely risen centre. Insufficient peaking can be observed in an undercooked muffin, caused by too low an oven temperature, or too short a baking time. When muffins are “too peaked”, it can be a result of overmixing, or that the oven temperature is too hot. When this happens, the muffins will most likely turn out to be tough and rubbery.
